ASSEMBLE COFFEE
Originally starting as a mobile coffee trailer, Assemble Coffee was founded by Brady and Whitney Johnson, a husband-and-wife duo passionate about creating an unforgettable coffee experience. Their dream of running a brick-and-mortar shop became a reality when they partnered with Texican Court, utilizing the boutique hotel’s Salt Tequila Bar space to serve coffee in the mornings before it transitions into a bar at night.
COZY SOUTHWESTERN VIBES
Walking into Assemble Coffee feels like stepping into a hidden café in New Mexico. The design draws inspiration from Native American, Spanish, and Mexican architectural styles, featuring stone walls, dark wood accents, and a vibrant, light pink pop of color on the doors. Our favorite part is the stunning adobe fireplace on one of the walls, creating a homey, cozy feel!
SIPS & BITES
The menu focuses on espresso-based drinks, including cortados, cappuccinos, and their signature vanilla cold cream cold brew. They’ve partnered with Voltage Coffee Project to source high-quality beans for a top-tier coffee experience! To pair, choose from pastries like muffins and croissants from Montecito Baking Co, or breakfast tacos from the hotel’s Two Mules Cantina.

Grab a seat at the bar for an up-close coffee experience, settle in at one of the small tables inside, or take your drink to the stunning courtyard!
