AMISH DOUGHNUTS
We've had Amish doughnuts before, and trust us when we say they go above and beyond your traditional doughnut! Milton's is back again this year, serving giant treats made with sourdough and topped with a sticky vanilla glaze -- all deep-fried, of course. Try the cornbread version too, a new addition to the menu!

Brisket and Brew Stuffed Pretzels
A Texan walked into a pub and....these pretzels were born! A finalist for this year's Big Tex Choice Awards in the savory category, these classic soft salted pretzels are filled with smoked brisket and homemade beer cheese, served with spicy mustard or barbecue sauce.

Candy Lemon Sour Face
Pucker up for this sweet and sour treat consisting of lemon candies topped with more candy and citrus! If you love sour candy and flavors, this dish is for you -- it was even one of the Big Tex Choice Award nominees in the sweet category.

Chill & Thrill Delight
The winner of the sweet category in 2025's Big Tex Choice Awards and potentially the healthiest dish on this list: cantaloupe, grapes, mango, pineapple, strawberries, and watermelon are all soaked in watermelon and lime juice, then topped with mango sorbet shavings.

Churro Cheesecake Jalapeño Popper
We'd be lying if we said we'd ever thought of combining these two dishes....but we're so glad someone did! From the outside, this dish looks like your typical churro, but inside you'll find jalapeño peppers with a sweet twist -- made with cheesecake filling! It's the strangely perfect combination of sweet and spicy, and dipping it in the dulce de leche sauce is a must.

Cookie Chaos Milkshake
If you've ever wanted to try pretty much every kind of cookie in a milkshake: cookie butter ice cream blended with snickerdoodles and golden and classic Oreos, topped with whipped cream, cookie butter cookie dough, a Biscoff cookie, and a cookie butter drizzle, with a Biscoff cookie rim. Buddy The Elf probably dreams of this drink, and clearly so do the rest of us -- it won this year's new "sipper" category!

COTTON CANDY BACON ON A STICK & DUBAI CHOCOLATE BACON ON A STICK
The viral sensation and winner of the sweet category in the 2024 Big Tex Choice Awards, one of the most talked-about foods from last year is making its return! A thick piece of bacon is engulfed in cotton candy, which is then smushed onto the bacon and caramelized by a torch down the middle, served on a stick. This year, there's also an updated version with Dubai chocolate!

We all know and love corn dogs at the State Fair, but if you haven't tried a Korean corn dog, you're missing out. Our favorite Japanese sando spot brought us the Matcha Sando for last year's fair, and they're taking their matcha game up a notch this year! Similar to an affogato, matcha ice cream gets topped with a shot of ceremonial-grade matcha and a Japanese sugar cookie shaped like Big Tex!

Pickle Pizza
This dish is the ultimate slice for pickle lovers: your classic slice gets a complete makeover, swapping the marinara sauce for cheesy ranch, more cheese, then topped with fresh dill pickles or fried pickles, creamy ranch dressing, and dill seasoning! We'll be getting one of each.

The name is a mouthful, but trust us when we say you're going to want a mouthful of this! We all know and love walking tacos, and there's now a dessert version!
