LA BARBIE TACOS
La Barbie is the brainchild of Olivia,a West Texas native who turned her love for Taco Tuesdays into a full-fledged business. After attending culinary school in Dallas, she set out to bring a fresh, high-quality spin on Mexican street food– with a special focus on chile verde, a West Texas staple that deserves as much hype as birria!
CHILE VERDE TACOS
If you’ve never had chile verde, it’s a slow-roasted pork dish simmered in a rich, tangy green sauce. While birria has taken the taco world by storm, chile verde offers a different, equally delicious experience—tender, flavorful pork with a kick, paired with consommé for dipping!
FRESH TORTILLAS AND ELOTES
For La Barbie, freshness is key, with sweet corn shucked every morning for the perfect elote and locally sourced tortillas made daily!

LOCATION AND HOURS
You can find La Barbie Tacos right outside of Elliot’s Hardware store at 1325 Inwood Road, open Monday through Friday from 11am to 3pm! There are no tables outside of the truck, so prepare to enjoy your food at home, or in the car if you just can’t wait (we don’t blame you).
