Sushi Kozy just opened on Ross Ave, and if you’re a fan of fine dining, thoughtful details, and next-level omakase, this one’s for you! Founded by Uchi alum Chef Paul Ko, this intimate Japanese bistro blends traditional Japanese cuisine with French and Italian techniques for a truly unique experience.

SUSHI KOZY

Chef Paul Ko has 17 years of experience as a sushi chef and spent 7 of them mastering his craft at Uchi Dallas, where he eventually became head sushi chef. Sushi Kozy is his first solo concept, named for both his last name and the warm, welcoming, cozy atmosphere he’s created. At the core is a deep respect for Japanese tradition, with subtle European influences that elevate each dish.

A COZY, CRAFTED SPACE

The interiors feel serene, clean, and intentional, with warm wood details, Japanese design touches, and even Scandinavian influence. Every detail is thoughtfully curated, from handmade menu stands to adorable phone holders Chef Ko brought back from Japan. There’s also a private dining room for an even more intimate tasting.

 

THE EXPERIENCE

The kaiseki-style omakase ($185) includes seasonal otsumami, pristine nigiri, a choice of land or sea entrée, a temaki handroll, and two dessert courses. Some favorites from our visit:

🦀 Snow crab chawanmushi with coconut foam

🥩 Wagyu tartare on brioche

🍣 Orange-zested nigiri with freshly grated wasabi

🍵 Green tea sorbet over blueberry granita with ginger foam

 

FROM THE BAR

The beverage menu features an extensive sake list, sake-based cocktails, and old-world wines, each selected to pair perfectly with the evolving courses!
